Pork Adobo is a typical Filipino dish and a favourite of many Filipinos. Ideally served with hot rice.


  • 300g Pork, osso buco
  • 100g Onions
  • 100g Tomatoes
  • 1 x seasoning (salt+pepper) – To Taste
  • 1 x Seasoning II (bay leaf/cloves/pepper) – To Taste
  • 2 1/2 ltr water
  • 30 g Tamarind
  • 1 pc sweet potato
  • 100 g White radish
  • 50 g Spinach
  • 1/5 dl fish sauce (chinese)
  • 50 g Lemon


  1. Place pork shanks in stockpot and cover with cold water
  2. Bring to a boil, skim off scum and reduce heat
  3. Add seasoning, tomatoes and onions
  4. Simmer until meat is tender
  5. Remove the meat, debone and cut into 1cm cubes
  6. Strain stock through fine strainer, add tamarind pulp, cubed sweet potatoes and radish
  7. Simmer until soft. Adjust seasoning with fish sauce and add spinach.
  8. Bring once more to a boil and serve. Serve the lemon wedges separately
