Also called Adobong Manok is one of the Philippines most popular dishes. It is easy to cook and it can keep for four or five days without refrigeration due to the vinegar which helps in preserving the dish.
- 3-pound chicken cut into serving pieces
- 1/2 cup soy sauce
- 2 closes garlic, crushed
- 3/4 cup cider vinegar
- 2 bay leaves
- 1/2 tbsp peppercorns
- 1/2 tbsp sugar to taste (optional)
Bring to a boil the chicken with all the other ingredients and simmer for 30 minutes or until the sauce is reduced to half. Serve hot with plain white rice.
